Watermelon Slushie


I found a recipe for watermelon granita but didn’t want to make it for two reasons. The first was that it seemed too involved (freeze, blend, freeze, scoop every 30 minutes!), and the second was that it called for sugar. I’m not really that opposed to using sugar but it’s unnecessary when watermelons are in their prime.

So this is sort of a lazy granita, or a watermelon slushie that reminds me of the slushies I used to get at the beach as a kid. It is so simple it’s hardly a recipe.

Ayurveda is obsessed with cooked food, and frozen food is generally avoided because it freezes the gut. But sometimes you just have an itch that needs to be scratched! I recommend enjoying this in between meals so it won’t create a bad food combination (melon does not digest well with any other foods), or as a meal replacement when summer heat has stifled your appetite. You can also use fresh watermelon instead of frozen for more of a watermelon smoothie. Another trick is to add a pinch of ground ginger or cardamom, both digestive spices that boost agni and taste great in sweet recipes.



Ingredients:

watermelon, cut into chunks and frozen

coconut water



Method:

Add watermelon to blender with a little coconut water to get the blender going. I used about 3 cups of watermelon and 1/4 cup coconut water. The texture is most like a beach slushie with a vitamix blender that comes with a “tamper” that you can use to aid in blending.
