Fresh cheese is a protein staple in the Ayurvedic diet and particularly balancing for vata and pitta. It’s nourishing and building for vata, and filling for pitta appetites.
I found this recipe in Divya Alter’s cookbook What to Eat for How you Feel. She uses it in so many dishes that I had to try it out. I follow her lead and usually pair it with broccoli and rice and have used it in her Ayurvedic lasagna.
